Rice pudding made with coconut milk and topped with toasted coconut

PREPARATION

  1. in a small sauce pan sock rice with 2/3 cold water for 30 min. Drain rice.
  2. In a medium saucepan bring coconut milk, milk, rice sugar, salt to boil. Reduce heat to low, and simmer for about 40-45 minutes stirring occasionally. It should have cooked down to a creamy mixture.
  3. Remove from the heat and stir lime zest. Pour in small dishes. Toast shredded coconut for few minutes till colour turn to slightly golden and top the pudding.
