Rice pudding made with coconut milk and topped with toasted coconut

INGREDIENTS
- 1/3 cup white rice
- 14 oz can of coconut milk (not cream)
- 1 ½ cup milk
- 1/3 cup sugar
- 2 tsp. lime zest
- 1/8 sal
PREPARATION
- in a small sauce pan sock rice with 2/3 cold water for 30 min. Drain rice.
- In a medium saucepan bring coconut milk, milk, rice sugar, salt to boil. Reduce heat to low, and simmer for about 40-45 minutes stirring occasionally. It should have cooked down to a creamy mixture.
- Remove from the heat and stir lime zest. Pour in small dishes. Toast shredded coconut for few minutes till colour turn to slightly golden and top the pudding.
