Stuffed Peppers is very easy and tasty appetizer

INGREDIENTS
- 4 bell peppers
- 2 dl long grain rice
- 1/2 onion, chopped
- 50 grams minced/ground lamb
- 1/4 to 1/2 vegetable stock cube
- Pepper
- A few slices of cheese - for this batch I used cheese made from sheeps' milk but use whatever kind you like.
PREPARATION
- Set oven to 225 degrees Celsius.
- Halve the peppers and rinse them, making sure to clean out the seeds. Place in boiling water for minutes, then drain them well.
- Boil rice with stock cube.
- Fry lamb with onion, season, then add garlic and then add a little water. Let the mince absorb most of the water.
- Place pepper halves in greased oven-proof dish. Mix rice and meat, then ladle it into the peppers. Place cheese on top. Bake in middle of oven until cheese has melted, about 15-20 minutes.
- Serve with possible leftover rice, vegetables, bread...
