Well I suppose most people would call it a Swiss roll but that country gets mixed up with ours just enough, I think! Also, sorry about the photo, I used a marmalade for filling which doesn't make for good pics,it would look better with some whipped cream

INGREDIENTS
- 5 tablespoons potato flours/potato starch
- 3 large eggs
- 1,5 dl ( just over a half a cup) sugar
- 1 teaspoon baking powder
- 3 tablespoons cocoa
- Filling: marmalade, jam, whipped cream and berries...
PREPARATION
- Set oven to 250 degrees Celsius (482 F). Beat sugar and eggs until "fluffy". Mix flour, baking powder and cocoa well and stir into the egg and sugar mix. Place a baking sheet on a baking tray and pour mixture onto it. (note! When baking with potato flour you need to bake the cake right away before the flour settles).Place in middle of oven for about five minutes. Gently place upside down on another baking sheet. Remove the sheet that was in the oven - if it won't come off, try brushing with a little cold water. Let cool between baking sheets, covered with a moist (NOT WET) towel. Spread with desired filling and roll up. If desired, decorate with whipped cream or powdered sugar before serving.
