INGREDIENTS
- 50 grams (almost 2 ounces) cold butter
- 1 dl (just under 1/2 cup) Turkish yoghurt
- 2,5 dl (1 cup) flour
- 1/2 teaspoon baking powder
- pinch of salt
- Optional: herbs
- 1 small tin of tuna in oil or water, drained
- A few drops tabasco or some harissa or sambal oelek
- 1 clove garlic, finely chopped
- 1/2 onion, finely chopped
- 2-3 tablespoons olived, sliced (or a sliced tomato)
- 1/2-1 cup Turkish yoghurt
- 1-2 teaspoons capers
- 200 grams (7 oz) grated cheese
PREPARATION
- Mix baking powder and flour well. Mix with COLD butter, yoghurt and a pinch of salt (plus herbs if desired). Place in an oven-proof dish, pierce a few times with a fork and let rest in the fridge for about 30 minutes. Set oven to 200 degrees Celsius (400F) and bake pie crust for about 10 minutes.
- Mix tuna with all the ingredients except olives and most of the cheese. Easy on the salt, as capers, olives and possibly the cheese, are salty. Pour into the crust and place olives on top and then sprinkle the rest of the cheese over the pie. Bake for about 30 minutes. If the top seems in danger of getting too dark, cover with a piece of tin foil.
NOTICE
Turkish yoghurt is a very firm and creamy yoghurt - if you open a can you can turn it upside down and nothing will fall out (hopefully). Find a similar product and give it a go! But don't try it with a runny yoghurt, that won't turn out well. The kind I use has a fat content of 10%, so I think it would be good if you can find something that's not too fatty.
